Muffins with yogurt and blueberries
Super easy
Cheap
Yogurt and blueberry muffins are a Sunday morning celebration — soft, moist from yogurt, full of whole blueberries that burst in every bite. Preparation takes ten minutes, and baking another twenty — no mixer needed, no long mixing, no skill needed.

The secret is in minimal mixing when wet and dry ingredients are combined — vigorous mixing activates gluten and makes tough muffins. Yogurt instead of milk gives a slightly tangy note and makes the texture velvety. They are served warm with coffee, or packed in a box for school/work. They freeze excellently — heat for 30 seconds in the microwave.
