Green beans with beef is summer homemade classic which every childhood in Serbia remembers. Young green beans, potatoes, beef and tomatoes together in one pot — simple, nutritious and full of seasonal flavor. Cooking takes two hours, but active work is minimal.

The key to good taste is fresh garden green beans and a little vegeta for a deeper tone. It is served hot with a spoonful of sour cream in the middle that melts over the warm sauce. With a piece of black bread, this is a full lunch that never gets boring during the summer months.

Ingredients

500 g beef (round or shoulder)
700 g young green beans (yellow or green)
3 pcs potato (medium)
1 pcs onion
300 g tomato puree
4 tablespoons oil
1 tablespoon sweet paprika
1 teaspoon vegeta
2 leaf bay leaf
1 teaspoon so
1 pinch pepper

  1. Cut the beef into bite-sized cubes.
  2. Clean the green beans from the ends and strings, then cut into 3-4 cm pieces.
  3. Peel the potatoes and cut into larger cubes.
  4. In a larger pot, heat the oil and add the meat. Fry over medium heat for 10 minutes until browned on all sides.
  5. Add finely chopped onion and sauté for another 5 minutes.
  6. Sprinkle with sweet paprika, stir briefly and immediately add a little warm water so it doesn't burn.
  7. Cover and cook for 45 minutes over low heat, occasionally adding warm water.
  8. Add the potatoes and green beans, then pour over the tomato puree.

  10. Cook for another 40-50 minutes until the meat and vegetables are completely tender and the sauce thickens.

Notes

Yellow beans are best, but green also works great — it's important that they are fresh and young.
For a thicker sauce, add a tablespoon of flour mixed in cold water near the end of cooking.
Serve sour cream with the green beans — it makes a difference.
